Chocolate muffins are a delightful treat, perfect for breakfast or a snack. Here’s a recipe for Chocolate Muffins that are rich, moist, and loaded with chocolate flavor:

Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup vegetable oil or melted butter
  • 2 large eggs
  • 1 cup buttermilk (or milk with 1 tbsp lemon juice or vinegar)
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips or chunks (optional, for extra chocolatey goodness)

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.
  2. Mix Dry Ingredients:

    • In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Mix Wet Ingredients:

    • In another bowl, whisk together the oil (or melted butter), eggs, buttermilk, and vanilla extract until well combined.
  4. Combine:

    • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
    • Gently fold in the chocolate chips or chunks if using.
  5. Fill Muffin Cups:

    • Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. Bake:

    • Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Cool:

    • Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Enjoy your homemade chocolate muffins! They’re great on their own or with a cup of coffee or milk.
